Melton’s Menu

3 c. potatoes, peeled/cubed

1 c. onions, chopped

3 lb. pork roast

4 cloves garlic, minced

1 c. water

1/2 c. ketchup

3 T. red wine vinegar

2 T. light brown sugar

2 T. reduced-sodium soy sauce

1 t. Dijon mustard

1/2 t. pepper and salt

Arrange potatoes and onions in slow cooker. Place pork on top of potatoes and onions. Spread garlic on pork. In medium bowl, whisk together remainer of ingredients and pour over pork. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Slice pork crosswise into thin slices.
